Get OrganizedBreak 2 eggs into a large cereal bowl and whisk them up. Set off to the side. Also set to the side butter and 1 teaspoon of vanilla extract. |

Let's Get CookingAdd the sugar, cornstarch and milk to a heavy bottomed pan. With the heat on a medium low setting whisk together all the ingredients making sure there is no lumps. Keep whisking everything together (you're not at the races so just whisk at a slow steady pace to ensure everything is moving) until the milk gets hot and the mixture starts to thicken up. Now turn the heat up to medium high. When everything starts boiling (you're still whisking) set the timer for 60 seconds, then remove the pan from the heat. |

Add the butter and vanilla, then move back over the heat. While whisking constantly let everything boil for another minute. |

Cool DownRemove the vanilla cream from the pan. I like to put it in a wide plastic dish because it will cool down faster. Place a piece of Saran Wrap right on top of the cream mixture. This will prevent a film from developing. Let the mixture cool down on the counter or in the fridge. |

Crunch TimePre-Heat oven to 350F. Mix the graham crackers crumbs, butter and sugar together. Spread the graham cracker mixture in a casserole dish and then place in the oven. Check frequently to ensure that it doesn't burn. I start checking at 4 minutes then every minute after that. I will push the crumbs around to make sure that everything gets browned. Take out of the oven and set aside. |

Whip CreamUsing a hand mixer beat the whip cream, powdered sugar and vanilla at high speed until soft peaks appear. *** If you prefer you can use pre-made whipped cream |

Serving Time (Nearly)To assemble the dessert place a few tablespoons of the crumbs in the bottom of the serving dish, then add some of the vanilla cream and whip cream. Add a few slices of banana then add crumbs, vanilla cream and whip cream. Just before serving add a few slices of banana. To make it extra good you can add toasted coconut or caramel or cherries on top. |
