1 Romaine Lettuce cut into bite size pieces
2 Roma Tomato diced
1/4 Cucumber diced
1 Carrot diced
3 cups Boneless Buffalo Chicken Wings chopped into bite size pieces
1/5 cup Black Olives sliced (*optional)
Croutons (*optional)
1/2 cup Sharp Cheddar Cheese shredded

There are two days a week that the cafeteria has something that gets a buzz and Thursdays is one of them. It’s the day they serve Buffalo Chicken Salad.  The salad is fantastic, but the price of the salad irritates me.  They charge $6.59 per person.  For $10.00 I can make that salad for my whole family and there will be left overs to take to work the next day.  Another benefit to spending time and energy to make this at home: its a perfect dinner for the long hot summer day.  It’s easy to make, and it cools you from the inside out.

I tried Ranch Buffalo Salad dressing that was pre-made, but didn’t like it.  There isn’t enough ‘zing’ (and I require a lot of ‘zing’), so if you have an extra minute or two grab my recipe for Buffalo Ranch dressing.  It only has 4 ingredients and you can give it all the zing you want, or you don’t want – it’s up to you.

As a heads up, the boneless Buffalo wings can be purchased in the deli section of the grocery store.  Just make sure you pay attention.  I’ve picked up the wings with bones and trust me, that adds time to making a salad that you don’t want if you’ve been at work all day.

Prep Everything!

Cut and clean the lettuce. Clean and then chop the tomatoes, onions, cucumbers, and carrots. Shred the cheddar cheese. Cut the buffalo wings in half or quarters. Drain the olives.

Put into a big salad bowl, add croutons and salad dressing - then enjoy!
