1 cup Butter MilkIf you don't have any handy, make some. You just need milk and a tablespoon of lemon juice, then just wait for a few minutes.

8 ounces Cream CheeseRoom Temp.

4 ounces ButterRoom Temp.

Close your eyes and imagine cupcakes… Chocolate Cupcakes… Chocolate Cupcakes with Smooth, Creamy and Light Peanut Butter Frosting. Are you hungry yet? Does dessert sound good?
I’ve made a lot of different types of cupcakes through the years and this one is definitely in my top five. It’s an easy recipe with an end resulting with cake is so light I think you can squish it up into something the size of a dime and eat it in one bite. Guess what is in this cake batter? Coffee! Maybe since there is coffee in the cake we could call this coffee cake and have it for breakfast. I’m sitting on cloud just thinking about it now. I happen to favor dark chocolate to regular chocolate so for this recipe I used Hershey’s Special Dark Chocolate Cocoa. If you’re a straight chocolate lover you may want to use Hershey’s Chocolate Cocoa which can be found at most supermarkets.
Peanut butter; I know that some folks can’t have it due to allergies. Those of you that can have peanut butter imagine eating it and not having it stick to the roof of your mouth or be so thick that it takes 3-4 minutes before you can talk to whomever is in the room with you. This peanut butter frosting defies all of that. This one is smooth, light and so tasty! You can eat it with a spoon, or better yet, officially decorate your cupcakes without fear of tearing the skin of the cupcake off and having frosting with little chocolate crumbs all over the place.
You can top this cupcake off with peanuts, chocolate covered candies or in this case Peanut Butter M&M’s.

Pre-Heat oven to 350F and line your cupcake tins with colorful cupcake liners. |

Dry IngrediantsIn a large bowl or stand mixer mix together all your dry ingredients: Sugar, flour, cocoa, baking soda, baking powder, and salt until combined - about 1 minute. Be sure you have your mixer on the lowest setting or you're liable to have flour all over the mixer, counter, flour and yourself! |

Wet IngredientsWith the mixer still on low add the eggs, one at a time. **To avoid getting shells into the batter I suggest that you break the eggs into a small dish, then add them one at time. Add the buttermilk and increase the speed a notch or two, then add the coffee, oil and vanilla. ***** THE BATTER IS SUPPOSED TO BE THIN! DON'T PANIC or ADD Flour ***** You're done! You've just created your own cake from scratch! Awesome! Now lets get those cupcakes made. |

Fill the cupcake liners in the tin about 2/3 full. If you go over that amount you're cupcakes will rise over the the of the pan. Because the batter is so thin I use glass measuring cup to keep everything cleaned up and so I can move through this process fast. Put the cupcake tins in the oven for approximately 22 minutes or until the top is domed and it has bounce if you touch it with your finger (i.e. it bounces back at you) or you can insert a toothpick. If it comes out clean it's done. |

Fancy Peanut Butter FrostingUse a paddle attachment for this part. Cream together cream cheese and butter on a medium speed. Turn off the mixer and scrape down the sides of the bowl at least once to make sure that the cheese and butter are well incorporated. Add peanut butter and after about a minute or so on medium, turn it off and scrape the sides and bottom of the bowl. Reduce the speed of the mixer to it's lowest setting and add a cup of powdered sugar. When blended add the next cup and so on. Then add vanilla. When the frosting is smooth the frosting is done, *** Hint: If the frosting is to dense for your taste add a tablespoon of whipping cream or milk. |
