Ingredients

1 3/4 cup Flour Sifted
1 1/4 cup Milk Whole
1/2 cup Coconut Milk Unsweetened
1/3 cup Shredded Coconut Sweetened
3 Large eggs
3 tablespoons Vegetable Oil
2 tablespoons Brown Sugar
1 tablespoons Sugar
1/4 teaspoon Salt
6 tablespoons unsalted Butter Melted
1 tablespoon Baking Powder
1 teaspoon Vanilla
Maple Chocolate Syrup
1 cup Maple Syrup
3 ounces Bittersweet Chocolate
1 pinch Kosher Salt

Every Sunday morning I make a big breakfast for Bob, myself and the dogs (at least that’s what they seem to think).  Bob love eggs, bacon and waffles!  I like something sweet with my savory and this recipe is right up there.  It incorporates coconut, coconut milk and chocolate, so how can it be wrong? It makes people think I’m a better cook than I actually am.

It’s  easy to make and the tastes.. well, its rather impressive.  You should give it a try!

Toasting Coconut

Preheat the oven (or toaster oven) to Broil. Cover a cookie sheet with aluminum foil and evenly spread the shredded, sweetened coconut.

Place the pan in the oven on the first shelf below the broiler. DO NOT WALK AWAY! The coconut is going to toast up rather quickly so it's important that you keep an eye on it and that you move it around to ensure that everything is evenly toasted.

Remove from the broiler and set aside.

Waffle Batter

Mix all the wet ingredients into a bowl (eggs, milk, coconut milk, unsalted butter, oil, vanilla). Add sugar, brown sugar and coconut. Separately sift the flour, baking powder, and salt.
Blend the wet and dry ingredients together until just incoroparted.

Put in the refrigerator while you prepare everything else.

Preheat the Waffle Iron

Pull out your waffle iron, plug it in and let it preheat.

Maple Chocolate Syrup

While the waffle iron is heating up pour a cup of maple syrup into a sauce pan. Add 3 ounces of bitter sweet chocolate. Turn the heat up to medium. Stir frequently as the chocolate starts to melt. Add a dash of salt, whisk the syrup and chocolate until well incorporated.

Reduce the heat to low and leave until you're ready to serve.

Spray your hot waffle iron with cooking spray, and then add about 2/3 of a cup of the waffle batter. Close the iron until the waffle is cooked through (2-4 minutes per waffle. Carefully remove from the hot iron and repeat (not the cooking spray) until all the batter is gone.

It's time to eat!

Add butter (or not) and maple chocolate syrup, garnish with roasted coconut and serve.
