Directions
Every Sunday morning I make a big breakfast for Bob, myself and the dogs (at least that’s what they seem to think). Bob love eggs, bacon and waffles! I like something sweet with my savory and this recipe is right up there. It incorporates coconut, coconut milk and chocolate, so how can it be wrong? It makes people think I’m a better cook than I actually am.
It’s easy to make and the tastes.. well, its rather impressive. You should give it a try!

Toasting CoconutPreheat the oven (or toaster oven) to Broil. Cover a cookie sheet with aluminum foil and evenly spread the shredded, sweetened coconut. Place the pan in the oven on the first shelf below the broiler. DO NOT WALK AWAY! The coconut is going to toast up rather quickly so it's important that you keep an eye on it and that you move it around to ensure that everything is evenly toasted. Remove from the broiler and set aside. |
