- 2 large Russet Potato
- 1 tablespoons Butter
- 3 tablespoons Sour Cream
- 2 tablespoons Red OnionFinely chopped
- 2 pieces cooked and crumbled BaconYou can substitute bacon bits - 3 tablespoons
- 1/4 cup shredded / divided Chedder CheeseOr substitute another type of cheese that you like, that melts well
- to taste Salt and Pepper

1 Done 45-60 minutes | Pre-heat the oven to 400F. Wash the potato's and then place them in the oven to cook. Start checking them for doneness at 40 minutes. To check, insert a fork. If the center of the potato is firm (the fork isn't moving smoothly to the center) let it cook for a while longer. If the fork goes to the center of the potato easily - it's done. Remove the potato's from the oven and turn the oven off (I forget to do this more often than not). |
2 Done 5-10 minutes | Food PrepWhile the potato's are cooling down get the rest of the ingredients together. Add the finely chopped onions, sour cream, bacon bits, butter and all but a few tablespoons of cheese to a small bowl. Save some of the cheese to top the potato's with while cooking. Carefully cut the cooled potato's length wise down the center. Using a tablespoon gently scoop the potato meat from the skins. You should be able to get relatively close to the skin. *** Remember, those skins are going to be the bowl for the potato filling so you need to be extra careful. Using a potato smasher, smash the potato's and other ingredients making sure that everything is well blended. At this point you also want to add salt and pepper. Be sure to taste it first so you don't over salt the potato's. |

4 Done 20-40 minutes | Wrapping this up!Pre-heat the oven to 350F. *** I cook my Twice Baked Potato's in a toaster oven - this may be an option for you if you have a small family *** Put the baking dish with the potato's into the oven for 20 if dinner is right around the corner and the potato's haven't cooled down 105%. Put it in the oven for closer to 40 minutes if you prepared the potato's several hours before dinner and they've been in the fridge for several hours. About 10 minutes before they're ready to come out of the oven add extra cheese to the top. Prior to serving add chopped chives and bacon crumbles as garnish. |
